Day 0 creates the reference
Shelf-life testing begins with the beer that the brewery considers ready for release. The Day 0 sample should represent the finished package and should be evaluated before storage creates additional changes. Sensory assessment, fermentable sugar, microbiology, dissolved oxygen, dissolved carbon dioxide, ABV and simple observations such as colour, haze and package condition can create a useful baseline.
The brewery does not need every parameter for every product. A heavily dry-hopped beer may place greater emphasis on oxygen and sensory freshness, while a sweet, low-alcohol or fruit-containing product may require stronger attention to pH, residual fermentable sugar and microbiology. The baseline should reflect the known risks of the beer rather than a generic laboratory menu.
Day 30 reveals early movement
After 30 days, the product may still taste fresh while analytical changes have already begun. A small increase in carbonation, a reduction in fermentable sugar or the first microbial growth can indicate that the package is not biologically stable. Changes in aroma, colour or bitterness perception may point toward oxygen pickup or ingredient instability even before the beer is clearly stale.
The comparison is more informative when the brewery stores samples under at least two conditions. Cold storage shows the best realistic product performance, while controlled room-temperature storage represents a less favourable but common distribution situation. The purpose is not to create an artificial failure, but to understand how strongly the beer depends on ideal handling.
Day 60 tests the commercial assumption
At 60 days, the brewery should ask whether the beer still matches the brand promise rather than whether it remains technically drinkable. The sensory panel can compare the stored beer with a fresh reference, while repeated analytical measurements show whether flavour changes are associated with oxygen, carbonation movement, fermentation or microbial activity. This is often the point where a product-specific pattern becomes visible.
A beer may remain microbiologically clean but lose hop aroma quickly, indicating that freshness rather than contamination limits the shelf life. Another product may retain its intended flavour but develop pressure or haze, pointing toward residual fermentation or package stability. The value of the programme is that it identifies the limiting mechanism instead of reducing every ageing problem to a vague statement that the beer is old.
Day 90 supports the release claim
The 90-day check allows the brewery to decide whether its current best-before period is supported by evidence. A product intended for six months does not need to be perfect after three, but it should be moving along a predictable path and remain comfortably inside the brewery's acceptance criteria. If the beer is already close to failure, extending the shelf-life claim without changing the process simply moves the risk into the market.
The brewery can use the results to shorten the declared shelf life, improve packaging, adjust storage guidance or change the product itself. It may also decide that a local draught version can be released under a different profile from a packaged version intended for wider distribution. The test plan therefore becomes a commercial tool as well as a quality exercise.
Turn the first study into a routine
A complete 30-60-90 study is especially valuable for a new product, a new package, a major recipe change or a beer entering a longer distribution chain. Once the pattern is understood, routine monitoring can be lighter and focused on the parameter that most strongly predicts failure. Periodic full studies then confirm that the process and product have not drifted.
