One QC Plan for Two Channels? Why Draught and Packaged Beer Need Different Release Rules

A keg poured near the brewery and a can travelling through distribution may contain the same beer, but they do not face the same journey. Storage time, oxygen exposure, temperature control, handling and the consequences of residual fermentation differ significantly between channels. Breweries therefore need one quality philosophy but more than one release decision.

The route to the customer changes the risk

Draught beer is often consumed sooner, particularly when it moves through a local taproom or a trusted hospitality customer. The brewery may know the delivery date, the cellar conditions and even the dispense system, which gives the team more control over how the product is handled. That does not make draught beer risk-free, but it changes which risks deserve the most attention.

Packaged beer may remain in a warehouse, retail shop or consumer refrigerator for weeks or months. Once a bottle or can leaves the brewery, temperature and rotation become harder to control, while a sealed package can amplify the consequences of refermentation, oxygen pickup or microbial growth. A release specification should reflect this longer and less predictable product journey.

Fermentable sugar has different consequences in a sealed package

Residual fermentable sugar matters in every channel because it indicates that the beer may still change. In a keg, further fermentation can affect flavour, carbonation and dispense, but the package usually has more headspace and a service system that may reveal the problem relatively quickly. In a bottle or can, the same process can increase pressure inside a sealed package and create a quality or safety concern before the customer notices any warning signs.

Stable gravity alone cannot always separate fermentable from non-fermentable extract. A direct fermentable-sugar measurement before packaging gives the brewer an additional view of whether substrate remains for yeast or contaminating organisms. The result should be interpreted together with the beer style, packaging method, intended shelf life, yeast condition and microbiological risk.

Oxygen and carbonation must match the channel

Packaged beer requires careful attention to dissolved oxygen because oxygen introduced during transfer or filling continues to influence flavour throughout storage. The effect may not be obvious on packaging day, especially in strongly hopped or dark beer, but can become clear after distribution. Measuring oxygen in the finished package and comparing it with sensory changes over time helps the brewery understand whether the packaging process supports the intended shelf life.

Carbon dioxide also needs a channel-specific view. In packaged beer, the measured level should match the target for the style and remain stable during storage, while draught beer must also work with the pressure, temperature and line conditions at the point of dispense. A beer that performs well from the brite tank can still pour poorly when the keg specification and dispense environment are not aligned.

Microbiology follows equipment and time

Draught systems introduce their own microbiological risks through couplers, lines, taps and cleaning practices outside the brewery. Packaged beer removes the draught line from the equation, but gives low-level contamination more time to grow and change the product. This means a brewery may use the same microbial methods for both channels while sampling different points and applying different release or follow-up rules.

For draught, it can be useful to compare brewery samples with beer taken from the customer's tap when a recurring problem appears. For packaged beer, samples from the beginning and end of a packaging run, followed by storage checks, can reveal whether contamination is associated with the filler or develops during shelf life. The channel becomes part of the investigation rather than an afterthought.

Build two practical release profiles

A channel-specific plan does not need to become a bureaucratic document. The brewery can define a basic release profile for local draught and a more protective profile for packaged distribution, then add tests for higher-risk products such as low-alcohol beer, heavily dry-hopped beer or products containing fruit. The two profiles should share core standards while recognising that a keg consumed next week and a can consumed in four months require different evidence.

The current craft market makes this distinction especially relevant because distributed draught gained a small amount of channel share in the first half of 2026 while distributed packaged craft declined. Breweries may change their route to market without changing the liquid, but the quality plan should move with the product.
